Make sure it's fresh; that's all that is really needed, from what I understand. I think there's some sort of asian food... I don't know what it's called... it's basically thinly sliced cuts of raw steak. Very very good stuff. If I can remember or find out the name of the dish, I'll post it; you could probably find out more by looking along those lines.

The dish's called Yukhoe, it's Korean. Basically raw shredded beef with ginger and other seasonings. It's good. :) Worth trying if you like it rare. :)

Wow, I have *got* to try that!

I haven't had a Korean style of beef that I didn't like, I don't think raw would bother me too much, and...I love ginger. In just about any form save, y'know, raw.
